Farmer Cheese Pancakes
Yield: 4 (5-pancake) servings Prep time: 10 minutes Cook time: 20 minutes
1 pound farmer cheese
2 eggs
salt, to taste
¼ cup granulated sugar
½ cup all-purpose flour
½ teaspoon baking powder
1 tablespoon olive oil
sour cream, to serve
1. In a large bowl, mix together the farmer cheese, eggs, salt, sugar, flour, and baking powder.
2. Heat the olive oil in a 10-inch skillet over medium heat.
3. Take 1 tablespoon of batter, and with damp hands (to prevent sticking), shape it into a round patty.
4. Place the patty in the skillet and cook until it is golden on each side, about 1 to 2 minutes on each side. Repeat with remaining batter.
5. Serve with sour cream.
